HDR is High Dynamic Range. basically it is to combine a few photos that were exposed at different exposures. Using software like photoshop CS2 or Photomatix, combining these photos yield a 32 bit/channel image. You will have to convert it back to 8 bit image. At the end, it will enhance the colour and more 3D.
Do a search at google, can find many tutorial of doing it. I think Photomatix gives better result.
